its easy. same principles as making home made ginger beer (plant). We tend to use freshly grated ginger or beetroot.

grate some root into a 500ml or larger jar
add 250 ml water
a touch of brewing yeast
4 tsp sugar (we use raw).
cover with a cloth (chux is good)

next day add 2 tsp sugar and some grated beetroot

continue for between 7 - 10 days.

strain off the liquid from your beetroot plant.

in a large container add between 500gm - 750gm sugar (to taste)
1 lt boiling water
stir sugar mix until dissolved
add 4 lts cold water (continue mixing)
add strained plant
Juice of 4 limes
add another 4lts cold water

bottle up, and leave in a cool dark place for up to 2wks. Testing bottles for gas content regularly.
Refridgerate

vwola... beetroot and lime.

Ahh, that's better then. Boo Radley turned out alright in the end, but he was a bit of a weirdo.
