I've started making my own sausages but have had trouble buying skins/casings. A local butcher wanted an arm and a leg for them. To make a kg of pork sausages from him would have cost nearly $30! He was also going to charge $15 a kg for fat. I'm sure skins shouldn't be too expensive. Can anybody near the Perth Hills recommend anywhere to buy them? I've searched the net for butchers supplies locally without luck. |

Do you have any Italian butchers close, I found very reasonable, the ones I know or http://www.sausagecasingsnaturally.com.au/order.html. Cheapest pork I can get is from Chinese butchers but prices vary daily for the same cuts. |

Try http://www.mbl.com.au/ on Bannister Road, Canning Vale We bought natural skins a few years ago. They come in 1kg bucket which will keep you going for ages. They are packed with salt and then we froze them and they have kept for ages. They also sell the artificial casings and pre mixes for sausages and small goods. I would visit the shop as the website doesn't have prices. They also have lots of cool toys. |

I got some plastic ones from supermarket and they were crap, our butcher gives what we wont for a doz eggs |

http://www.sausagemaking.com.au/shop/in ... cPath=2_48 here's another option you sign up and they give you prices has a few recipes to I am on a sausage making forum still haven't made any other than skinless My parents used to make a air dried pork paprika and leek one but dad cant remember the recipe. Most people use shoulder as it gives you the 20 to 25% fat required. On special you can pick up shoulder for $6 or $7 a kilo. |

Just bought myself the book "home sausage making", and a Kenwood chef, just like my mum used to have, damn solid machines these ones.. Friday BBQs at the shop should be a whole new experience .. I'm up to my second kenwood(plus 1 Aldi) in 2 years bread making will kill them Luckily Kenwood was under warranty |
