It's the season for plentiful supplies of tomatoes. Making them into sauce, chutney and relish is fun, but its time-consuming and you can only eat so much. The easiest way to preserve tomatoes is to cut out the core and put them into plastic bags and freeze them. No blanching required. While no good for salads, the frozen tomatoes can be easily peeled (the skin sloughs off like with cooked beetroot) and put straight into soups, stews, casseroles. No need to thaw them. Or even turned into sauce, chutney, relish, etc if you run out of that later in the year |

Good Tip GS - thanks I still use my mum's old Vacola preserving (bottling) kit - bit of a hassle dedicating the best part of a day to doing it, but jeez they taste good in the middle of winter in a casserole or pasta sauce. |

OK, OK! Enough's enough. I've processed more than 30 kgs of tomatoes every way I can think of and given away several kgs. They're still coming and there only the two of us to eat them (plus the odd guest or two). And I hate waste. I only planted a couple of punnets, but it seems to be a bumper year for tomatoes. I'm beginning to understand where the idea for that movie 'Invasion of the Killer Tomatoes' (or something similar) came from. I'd love to swap recipes with anyone in the same boat - or even if they're not. |

My chooks love tomatoes. They fight over the cherry ones but seem to share the larger ones they can't run off with. |

Try freezing the tomatoes Put them in a bag pull them out as you need them dip in water the skin defrosts in seconds slip it off and its just like fresh tomatoes . Works best for cherry and Roma in cooking later on. |

Yes Dad puts them in plastic bags has tomatoes all year.They are no good for salads thawed but great for cooking. They don't stick together and thaw pretty quickly too I cant believe they aren't sold frozen in supermarkets |

Cherry tomatoes are great semi dried in the oven Cut them in half, put on a baking tray and sprinkle with your choice of herbs Dry in oven at 100C for 4 or so hours to your liking. Will keep in fridge for a few days or you can put them in jars and cover with extra virgin olive oil for longer keeping. |
