I’ll be damn, how did you get them so clean, do you have a Front Loading washing machine?
I have spent the whole afternoon scrubbing them one by one and still have a third of them left for tomorrow.

Are you aware that the ‘chokes’ should be left for few days in the sun or in the fridge before use?
They contain inulin, not starch, and it gets partly converted into fructose if left in the sun or fridge (or harvested after the first frosts).
It also reduces those undesirable side effects :ohdear: . (Re: Herbs & Spices, by Susanna Lyle)

An idea on how to get two uses of them.

http://mariquita.com/recipes/sunchokes.html (Sunchoke Gratin) (or similar recipe)

Do not put salt in the water, but later after straining the chokes.

And use that (unsalted) strained water for

Some of those chokes baked,
nothing spectacular, just like mashed potatoes, a bit nutty taste.

And the byproduct happily bubbling away.
Somebody will recognise that keg. (thanks F&F)

They make a really nice gratin (potato bake).

I saw a TV programme on them at the weekend (Edible Garden with Alys Fowler on Lifestyle). She says you can leave them in the ground and only take what you want as you need them.

She also said that if you add Winter Savory when you cook them it helps in the gas department.

I planted some a while ago that I bought at the supermarket, but no sign of them yet.

I just harvested my first tubers from one plant I bought from the BYAP shop when I picked up the quails (may they rest in peace) and I was quite impressed with the yield. I boiled one to try it and it Really does taste like artichoke.

I am keeping some of the tubers to plant out again, does any one know when they are best planted?

G'Day Simo,
I actually leave/store them in the ground where they grew. When we want some I just go and scratch around and get what we need. We never get them all and when the time comes they just pop up all by themselves and become the next crop :thumb:

Thanks Curnow, I like the idea of a veggie that grows and takes care of itself.

This is true, I left some of mine in the fridge fo a few days and they went slightly soft, then I roasted them, the next day there was no marked increase in the production of noxious gases :fart:
