ok so we have like 500 seeds started in our greenhouse, and also a AP ayatem starting in 2 days.

well, 2 weeks ago we started a 5 gallon bucket for compost.
coffee grounds
veggie left overs
fruit left overs
a tiny bit of bread
rabbit poop from 1 rabbit
small amount of water
lots of mixing

but before putting anything in the bucket, it goes in the massive blender and gets sliced diced and finely chopped so it breaks down faster. now its juts a bucket of brown muchy stink.

so when do i know when its usable and will help my garden?

Probably take a couple of months, but I reckon it would still be ok to dig it into your garden sooner than that. Have you considered a worm farm?

i bought a huge tote bin to make a worm bin, so is there a writeup here for info? i know how to do worms but now sure if i should use a loamy soil (sandy) or buy some potting soil to use to mix in the compost, or just 100% straight compost?

They need to sow in a drill and obviously didnt put any dry sand into a jar with the seeds when they cast them
