A bit about myself.

Been brewing on and off for 6 or 7 years, but have really been getting into it in the last 18 months - working away from the standard kit and kilo brew and trying new things with hop additions, boiling grain etc.

My House Beer is in the style of Australian Pale Ale with Amarillo Hops and Crystal Malt Grain over a toucan Coopers APA or Light Liquid Malt Base.

I mainly keg these days but I always bottle my Stouts.

I brew sprits but have not for a while due to water quality and I'm lazy. I installed an RO filter in the house so my water quality issue should be fixed now. I'll have to give brewing beer a go again.

I have brewed for about 10 years or so and still use stubbies, time has meant not much brewing of late but I like the coopers pale ale in the tin, may try kegs in the summer. I try a few different things from time to time and a nice hot chilli in the stubbie adds some flavour, and also try priming with a black jelly bean, one bean to a 375ml stubby and 2 for a 750ml bottle, yes Jelly beans contain that much sugar

They are good hey, I like to keep it all malt too so usually ditch the BE2 for a Litre of Light Liquid Malt



Havent tried this but had a really good Chilli Beer at the Wicked Ale Brewery in Yallingup years ago. Apparently Birds Eye's are the way too go?



Dont know if I could handle an Anaseed Beer Remind me too much of Black Sambuca!

If i remember right. Axl & Jamie do a pretty good apple cider

I just put my first brew on for 18 months.
Had 3 flops in a row that put me off doing it again.
They all tasted cidery.
Heres hoping this one works.

There will be a reason for it tasting off oldute and it is probably something really simple, If you tell us exactly what you are doing and what ingredients you are using then we may be able to narrow down the problem.

Dave the black jelly bean doesn't make it taste like sambuca, it is quite an unusual taste, if you ever do bottles again try one bottle

And where am I going to source 1 Jelly Bean? I would be forced to buy many a Jelly Bean and Im not ready to make that sort of commitment!

If by "Cidery" you mean it was acidic then you could either have an infection or you are fermenting at too high a temperature. Also in some instances the acidic taste comes from the use of refined sugers in your brew.

Good luck with the latest one, though if it's an infection issue and you haven't found the source you may well have the same problem again.

By "cidery" I mean it tasted like a cross between beer and apple cider. (drinkable but not nice).
I always washed the plastic fermenting barrel out with bleach & water and soaked it for a bit with the bleach in it first, then rinsed well.
I also made sure I cleaned the tap & tap thread well and I cleaned the bottles with that cleaning powder that you add to water and dont have to rinse, although I rinsed it one of the times which didnt make any diff.
This time I have used a beer belt around it to hopefully maintain an even temperature while fermenting, dont know what the temperature is but it doesnt feel overly warm.
My first 2 brews were good, then had 3 shit ones in a row. After you invest time waiting for it to gas up its dissapointing when it doesnt work. Hope this one works.
