well, santa just came early and brought me a lovely 9 tray excalibur dehydrator, so now i'm on the hunt for jerky marinades. what are people heres favourites I found this online, and it sounds good 1 cup soy sauce 1 cup worcestshire sauce 1 1/2 tspns garlic powder 1 1/2 tspns onion powder 1 1/2 tspn paprika marinade o/n and then dry 6-8 hrs. but i'd be love to know anyones secret recipes (that your willing to part with) tonight, as a test I have apricots, papaya and pineapple (all super cheap at the market), so we'll see how it goes tomorrow. |

1. Ol' Man Stillmanz Naga/Fatalli Sambal sauce with garlic, soy sauce, ginger, salt, pepper, cayenne powder and chilli powder. 2. My own Musthabs with salt, pepper, cayenne powder and chilli powder. 3. Soy sauce with honey and garlic. 5. Ol' Man Stillmanz Devils Tongue Jerk Sauce with garlic, soy sauce, ginger, salt, pepper and brown sugar. My measurements are pretty ad hoc I jast add whatever I feel at the time. You could substitute any of the above chilli sauces with your own favourite one. |

some other things that make for good jerky, minced fresh garlic crushed hot red pepper ground smoked peppers on lean meat like venison.. few drops of olive oil. vinegar cooking sherry teriakki sauce liquid smoke flavoring fresh ground apples dales steak seasoning i out grew my excali and bought this one from cabala's 160l model unless you do commercial processing the excali will serve you a life time. i sold mine for $150usa what i paid for it used....the first called came straight out for it...i took 30 calls so i guess i sold to cheap http://www.cabelas.com/ensemble/Home-Ca ... %3Dproduct |

He Orcy, how did it go? I tried my first jerky last night. marinated in honey, soy, worchestershire and tomato sauce. I reckon it turned out ok |

A friend of mine has been making fish jerky.. Unless you really love fish I would not recommend it.... |

Unless you really love fish I would not recommend it.... i visited a fish market on the great mississippi river they had fish jerky....it looked like crap, i did not even try it. it was made from a carp.....an that can never be good.....hehehe |

he made his from herring fillets, I don;t think he did anything to them, just salted and dried... gross.... |

ummmm pickled herring....herring an oinions with cream sauce....drool. i'll pass on the fish jerky tho. i figure if i get one more chest freezer i could put away some venison in whole muscle slabs for jerky, and scrap bags for sausage making in the "off" season. i refuse to buy beef.....i would jerk some roos if they hopped about here |

Yeah I don't mind pickled herring, or rollmops. In small quantities, now and then... |

My first lot went really well, but I ate way too much of it way too quickly. If only I had some self control. Going to try some using Flank Steak in the next couple of weeks. I used eye fillet the first time, and it seems like a bit of a waste of good fillet. I've been doing batches of chillies from the garden for chilli flakes over the last few weeks, and a couple of early papayas. |

Yes, I think perhaps it might be an idea to make a very average jerky... Otherwise it just goes... This was always my moms theory, she would buy very plain horrible biscuits, that we wouldn;t really eat. When I asked why she didn't buy some nicer ones, the answer was "because you kids will eat them"... I guess it makes snce in a way... :shrug: |

When i lived in indo the locals used to do a simialr thing with their fish, drying it in the sun. delicious also a friend from lap lap land does a similar thing with sugar and trout, apparently it is reall nice, might be giving it a try with my next lot |
