Hey Kit, some trees we have at home are Grafted and if a branch grows from Graft they don't produce, maybe your problem, just cut off anthing growing around the graft, an orange tree for instance maybe grafted to grapefruit root stock, if new growth comes from the graft it will be a grapefruit trying to take over

The thorny one is probably the graft taking over unless its
the Lemonaide, this tree is really thorny, lemons can get thorny to if under stress

You need to wee on the trees a bit too the leaves are yellow
Pithy fruit is usually uneven watering, give them a few doses of citrus food regularly

There are a few citrus trees that have thorns, Ive seen them on grapefruit, limes, lemons and honey murcott mandarins are bad.
I agree the graft may have sent up a shoot.
One reason why fruiting on citrus is a bit patchy is year about fruiting, where the tree takes a rest, also weather variations.
